THIS IS A MOIST CAKE THAT WILL KEEP IN AN AIRTIGHT TIN FOR A WEEK, IF IT LASTS THAT LONG. IF YOU HAVE CHILDREN DON'T LET THEM SEE THE FULL INGREDIENT LIST THEN THEY WILL LOVE IT.

Ingredients
Switch to Cup Measures- 500 grams dates (stoned)
- 200 grams ground almonds
- 1 teaspoon almond extract
- 6 eggs
- 2 tablespoons cocoa
- 1 packet chocolate chips
- 2 tablespoons honey
Method
- PRE HEAT THE OVEN TO 160 OR GAS MARK 3
- BOIL THE KETTLE, GREASE AN SQUARE OF ROUND CAKE TIN AND LINE WITH BAKING PARCHMENT.
- EMPTY THE DATES INTO A BOWL AND POUR ON THE WATER AND SET ASIDE FOR 15 MINS.
- IN A CLEAN BOWL BEAT THE EGGS AND ADD THE ALMOND EXTRACT, COCOA POWDER AND HONEY, MIX WELL.
- DRAIN THE DATES AND BLEND TO A PULP ADD THE REST OF THE MIX AND FINALLY STIR IN THE ground almonds.
- POUR THE MIXTURE INTO THE LINED TIN AND BAKE FOR 45 - 55 MINS( THIS IS A DENSE CAKE THAT WILL NOT RISE) TURN ONTO A COOLING RACK
CUT INTO SQUARES AND SERVE WITH CREAM OR CRÈME FRAÎCHE.
