What does this mean?

A beautiful stand alone salad or perfect served with grilled chicken or fish. Would make a lovely addition to a Christmas buffet.

Ingredients

Switch to Cup Measures
  • 150 grams red grapes (seedless - halved)
  • 150 grams grapes (seedless - halved)
  • 1 handful fresh tarragon
  • 100 grams rocket
  • 100 grams goat's cheese
  • 50 grams pinenuts (toasted)
  • 50 grams flaked almonds (or walnuts - toasted)
  • ½ orange
  • ½ lemon
  • 25 ml red wine vinegar
  • 75 ml extra virgin olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

Method

  1. Mix together orange and lemon juice, vinegar, olive oil and season with salt and pepper.
  2. In a bowl place grapes, tarragon and 1/2 of the goats cheese roughly crumbled and the freshly toasted nuts. Add a couple of spoonfuls of dressing and gently combine. Let stand for 5 minutes to allow flavours to mingle.
  3. Dress rocket with a little of the dressing and then combine the goats cheese and nuts mixture with the rocket.
  4. Place on a serving plate and crumble remaining goats cheese over top .
