This is my great grandma's recipe for colcannon. This can be served as a side dish but would traditionally often be eaten as a main meal. (sorry I have no exact measurements):

Method
- Boil potatoes in their skins then mash, I use a moulix but she always used a wooden spoon, add plenty of salt and pepper.
- Add milk or cream (*I like to use half & half) to the potatoes until desired consistency achieved (usually quite firm but still creamy).
- Add shredded and cooked kale (cooked until soft in butter and a little water, lid kept on the pan so it almost steams, drained.) and mix well (must use a wooden spoon for this, don't know why but it seems to be the only thing that works for us).
- Put onto serving plate and make a 'well' in the centre, put a small amount of butter in and allow to run down the sides of the potato.
- Sprinkle with good quality salt as desired.
