Ingredients

Serves: 5-6

Metric Cups
  • green lentils (soak overnight)
  • 3 large potatoes (diced fairly small)
  • 2 onions (diced)
  • 1 tablespoon paprika
  • olive oil
  • garlic (diced small)
  • 2 vegetable stock cubes
  • 1 litre water
  • 2 tablespoons honey
  • 1 can tomato
  • 1 pinch of salt (to taste)
  • lemon slices (to serve)
  • green lentils (soak overnight)

  • 1 tablespoon paprika
  • olive oil
  • garlic (diced small)
  • 2 vegetable broth cubes
  • 1⅘ pints water
  • 2 tablespoons honey
  • 1 can tomato
  • 1 pinch of salt (to taste)
  • lemon slices (to serve)

Method

Green Lentil Soup, My Best Standby Dish for Many. Cheap Too :) is a community recipe submitted by AnLi and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Sweat the onion and garlic in olive oil over medium heat in a big saucepan ( I use 5 a litre pan for this batch), add the paprika powder and after a couple of minutes the soaked and drained green lentils, diced potato, tomatoes, stock cubes, honey and water. Simmer for about 35 minutes.
  • When ready, season with salt.
  • Serve with wedges of lemon to squeeze into each plate individually. Others might like a dollop of crème fraîche in their plate...
  • Recipe can easily be multiplied for big groups, freezes well and improves (if possible) on reheating. Serve with a good bread and butter, or cheese.
