Ingredients
Switch to Cup Measures- 50 grams olives (green or black finely chopped)
- 100 grams mozzarella (grated)
- 20 grams Parmesan cheese (grated)
- 2 tablespoons fresh flatleaf parsley (chopped)
- 8 slices white bread (without the crusts)
- 2 tablespoons olive oil
Method
- Preheat the oven to 180oC. Put the olives, mozzarella, cheese and parsley in a bowl and mix well.
- Drizzle 4 slices of bread with the olive oil and lay them with the oily side down on a lightly oiled baking sheet.
- Divide the cheese mixture over the bread and top with the remaining slices of bread and drizzle with the remaining oil.
- Place them 10 minutes in the oven and turn if needed.
- Cut each sandwich in 3 pieces.
