After many careful experiments it has been concluded that when eggs look like they are done- They Are! Once you start to see the yolks going slightly cloudy all over, this is very close to the eggs being done. I would say that 30 seconds from this point is when the eggs are done on a low heat.

Method

  • To save time, use your kettle to heat the water. Gather your ingredients
  • Put the bread in the toaster on a fairly high heat
  • Once the kettle has boiled, pour into a low rimmed pan. The heat should be on very low, and you should literally only see a few bubbles. Now crack the eggs carefully and open them slowly as close to the water as is safe to do so. Opening them in this way means that they will stay together as much as possible.
  • While the eggs are cooking you have about 2-3 minutes to finish the toast, which hopefully should be done by now.
  • Peel a clove of garlic and cut it in half, and rub the newly exposed area all over the toast. You should see it become slightly oily.
  • Keep an eye on the eggs, as it is better to remove them before being too well done.
  • Quickly spread pesto over the toast. Keep checking the eggs. If the eggs are not ready yet you are doing extremely well! Use the guidelines as mentioned at the start of the recipe to decide when the eggs are done. Once they are ready, carefully lift them out of the water and position on the toast. Add a capful of balsamic vinegar if you like Add black pepper to taste Enjoy!
