HEALTH FREAK MUFFINS!

This is not one of my own, but definitely one of my favorites. Loaded with carrots, apple and raisin so you can fool your kids with absolutely no problem! Bake up a bunch and freeze for a quick healthy breakfast or nutritious snack.

Ingredients

  • Vegetarian
  • 2 cups sifted flour (you can also use whole wheat)
  • 1 1/4 cup sugar (I usually use just one cup)
  • 2 cups grated carrots
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger (if you like)
  • 3 eggs
  • 1 cup raisins
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 peeled, grated apple
  • 1/2 cup chopped nuts (I usually use sliced almonds)

NOTE: use a wooden spoon to stir, NOT a mixer! Just mix until combined!

Method

  1. Prepare all ingredients before you begin (grate carrot/ apple, wash raisins, sift flour, grease and flour muffin pan).
  2. Combine flour, sugar, soda cinnamon and ginger (if desired).
  3. Stir in carrots, raisins and nuts.
  4. In a separate bowl, mix eggs, oil, apple and vanilla. Add to flour mixture and stir until combined.
  5. Spoon into greased muffin pan and bake at 350 degrees/ 180 degrees for 18-25 minutes.
