What does this mean?

This pancake is different from American pancakes because it is very thin and it is stuffed with different kind of things. Served as a second course after Goulash soup it makes a genuine Hungarian lunch.

Ingredients

Switch to Cup Measures

For the pancake

  • 150 grams flour
  • 1 medium egg
  • 400 ml milk (or 300ml milk and 100ml sparkling water)
  • 1 pinch of salt
  • 1 pinch of sugar
  • sunflower oil (for baking)

For the filling

  • 250 grams cottage cheese
  • 1 medium egg yolk
  • sugar
  • vanilla essence
  • lemon zest
  • raisins (soaked in rum or brandy)

For the apple filling

  • 3 apples
  • ground cinnamon
  • sugar

Method

  1. Mix the flour, egg and some milk and make a smooth base. Then add the rest of the liquid and salt and sugar (not too much sugar otherwise it will stick to the pan) so that you get a cream-thick mixture.
  2. Add the liquid carefully, it shouldn't be too thin. Get a pan, and add a teaspoon of oil. Heat it and add some of the mixture. It should be very thin, almost as paper, but fill the pan completely.
  3. Fry one side until it's golden, then turn it with a wide knife or something like that (experienced cooks can turn it by throwing in the air). Fry the other side.
  4. Simply mix the ingredients adding sugar to your taste. Then get a pancake and either put some filling in a row or spread it on the pancake, and then roll it.
  5. Another popular filling is the apple filling: Peel the apples, grate them, add some sugar and cinnamon to your taste and stew it in a pan.
  6. Fill the pancakes in the same way as described above. Simple, but very delicious fillings are jams, cocoa powder or ground cinnamon with sugar, chocolate-hazelnut spread or you could even try peanut butter. Lots of variants!
