Incandescent Fruit Salad

Introduction

This fruit salad is totally my Mother-in-Law's invention and I have to give her credit for the simplicity of its genius. It is a beautiful salad with a see-through lemony juice that turns into an incandescent pink after the inclusion of the strawberries. Lovely to look at especially in a glass bowl and even lovelier to eat!

Ingredients

Serves: 6

For the Limonada

  • 10 lemons
  • 1 cup sugar
  • 6 cups water (to taste)

For the Fruit Salad

  • 5 large bananas
  • ½ strawberries
  • orange blossom water
  • rosewater

Method

  • Cut the Strawberries down in half each, remove the white tip, put them in a bowl and sprinkle some sugar on top of them. Put the bowl on the side.
  • To make the Lemonade: Wash the Lemons well and cut them down to 8 pieces each. Put the Lemons in another bowl with 1 round cup of sugar. Mix the Lemon pieces and sugar well and put in the fridge for 2 hours.
  • Take the Lemons and Sugar mixture out of the fridge, put gloves on and massage the lot very very well, squeezing all the juices out and rubbing the skin of the Lemons thoroughly in the process. Add 5 cups of water, mix well. Put in a strainer and get the liquid out.
  • To assemble the Fruit Salad: Chop the Bananas down to circles and pop them in the Lemonade straight away, as the Lemon juice stops them from browning.
  • Pour the Strawberries along with the juice that has oozed out of them into the Lemonade and Banana mix. Add 1-1/2 teaspoons of Orange Blossom Water and 1-1/2 teaspoons of Rose Water.
  • Mix the lot and put in the Fridge. This willl slowly turn into an incandescnet pink mixture that is very appealing and delicious.
  • Additional Information

    I don't usually like Fruit Salads, when they are served I feel cheated out of a pudding! But not with this one, this one is a treat!
