Indonesian Spice Cake

Introduction

This is a really nice cake if you don't want anything sweet, but still want cake

Ingredients

Serves: 4-6

  • 1½ cups brown sugar
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 4 ounces butter (at room temperature)
  • ½ cup milk
  • 1 vanilla bean
  • 1 teaspoon baking soda
  • ½ cup olive oil
  • 2 medium beaten eggs
  • ½ teaspoon nutmeg
  • ½ teaspoon ground cinnamon
  • ½ teaspoon cardamom powder

Method

  • Butter a 20 cm round cake tin.
  • Combine the sugar, baking powder and flour in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Spread half the mixture in the prepared cake tin.
  • In a saucepan, heat the milk with the vanilla bean to just below boiling point. Turn off the heat and allow the milk to stand for 10 minutes then remove the vanilla bean.
  • Dissolve the bicarbonate soda in the milk and mix in the olive oil, beaten eggs and ground spices.
  • Add this to the remaining crumb mixture and mix well. Spoon the mixture into the prepared cake tin and bake in a pre-heated 180 ºC oven for 1 hour.
