JAM PUDDING

A boiled pudding for when it's cold and there is nothing in the house!

Ingredients

  • 125 ml jam (apricot is good) or golden syrup
  • 2 teaspoons bicarbonate of soda
  • 125 ml butter
  • 375 ml flour
  • 1/4 teaspoon salt
  • 625 ml water
  • 325 ml sugar
  • 1 teaspoon ground ginger or cinnamon
  • a tablespoon of vinegar
  • a teaspoon of butter

Method

  1. Boil the water, sugar, ginger, vinegar and teaspoon of butter for 3 minutes.
  2. Mix the rest of the ingredients to a dough, and add to boiling syrup in spoonfuls.
  3. Put on lid, turn down to low heat and cook for 5 minutes. DO NOT STIR.
  4. Remove from stove and serve with cream, custard or ice cream.
