Ingredients

Switch to Cup Measures

For the knackflarn

  • 200 ml caster sugar
  • 50 ml double cream
  • 50 ml golden syrup
  • 150 ml butter (melted)
  • 200 ml flour
  • 2 teaspoons vanilla essence
  • 1 teaspoon rolled oats

For the choc filling (optional)

  • 50 grams unsalted butter
  • 2 teaspoons cocoa
  • 2 teaspoons icing sugar

Method

  1. Mix all the ingredients together.
  2. Make little cookies with two teaspoons (they get a lot bigger in the oven!), put on a lined baking tray or Bake-O-Glide.
  3. Approx. 5 minutes in a 180 C oven. Leave on the tray for a few minutes before you transfer them to a cooking rack.
  4. When the cookies are completely cooled, use a knife and smear a thin layer of the choc filling on one before sandwiching two together.
