Introduction

A pearled wheat, poppy seed and honey soup which is served as the first course at a traditional Ukrainian Christmas Eve dinner.

Ingredients

Serves: 2

  • 1 cup pearled barley
  • 3 cups cold water
  • ½ cup poppy seeds
  • 2 tablespoons sugar
  • ⅓ cup honey
  • ½ cup boiling water
  • ¼ cup chopped nuts

Method

  • Bring pearled wheat and cold water to a boil. Then reduce heat and simmer until wheat kernels burst open. If it starts looking dry, add more water.
  • Scald poppy seeds with boiling water, then drain in sieve.
  • Put poppy seeds, sugar, honey and hot water in food processor or blender and process until very fine.
  • Pour into a serving bowl and add the chopped nuts.
  • When ready to serve, add the cooled pearled wheat into the poppy seed mixture. Serve cold.
