What does this mean?

I eat salads a lot with our main meals, so they're usually very easy. This is one favourite for when my mum gives me a ton of apple cucumbers. It would work with regular cucumbers though:)

Ingredients

  • 2 large Roma tomatoes
  • 1 apple cucumber
  • 1 small red onion (cut into rings)
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons fresh oregano
  • ½ teaspoon superfine sugar
  • seasoning (to taste)

Method

  1. Slice tomatoes and cucumbers into about 5mm rounds.
  2. Layer the tomatoes, cucumber and onion in a medium bowl.
  3. Whisk the oil, vinegar, oregano, seasonings and sugar together.
  4. Drizzle dressing over cucumber salad.
  5. Refrigerate for an hour or a little longer before serving.
