LEMON TIRAMISU

It is not really a tiramisu as such...just used the basic principles of it.

Ingredients

MASCARPONE MIX

  • 250g Mascarpone cheese
  • 3 egg whites (whisked until stiff)
  • 3 egg yolks 50g sugar (Beat sugar and yolks together until colourless)
  • Lemon curd Boudoir biscuits (lady fingers)

SYRUP

  • 2 lemons juice only
  • 25g sugar (Boil lemon juice and sugar and then leave to cool)

 

Method

  1. Whisk the whites and put to the side
  2. Whisk the yolks and sugar until colourless and then add the mascarpone cheese and blend together well.
  3. Slowly fold in the whites to the yolk mix
  4. Dip the sponge fingers into the syrup (soak) and place in the bottom of the dish (small glasses or larger glass bowl)
  5. Add a layer of the mascarpone mix and then a layer of the Lemon Curd. Keep layering the mascarpone mix and the Lemon Curd until you reach the top
  6. refrigerate until needed. (Always best to do the day before needed.) ET VOILA!!!!!
