Ingredients

Switch to Cup Measures
  • 500 ml lemon curd
  • 1 can pineapple chunks
  • 250 ml cream
  • 2 packets sponge finger

Method

  1. beat the cream to whipped cream - add the lemon curd, and stir gently
  2. put bit more than half of the pineapple pieces in the lemon curd mixture, and stir gently
  3. break the ladyvingers into pieces, and add to the mixture 
  4. put everything together in a flat bowl, and use the pineapple pieces that were left for decoration 
  5. cover it with plastic, and put in the fridge for at least one hour (2 is better)
