Matar Pulao or Green Peas Rice

Introduction

You'll find this across India and this is my version of making it. I normally refer to it as Deliciously green.

Ingredients

Serves: 2-3

  • 1 cup peas (fresh or frozen)
  • 1½ cups basmati rice
  • 2½ cups water
  • 3 tablespoons vegetable oil
  • 2 tablespoons curd
  • 2 green chiles (slit vertically)
  • curry leaves
  • 3 cloves
  • 1 pinch of salt (to taste)
  • cilantro (to garnish)

Method

  • Wash the Basmati rice and keep in the refrigerator for an hour or so.
  • In the meantime, boil green peas in a pan with some salt. Note that do not cover with lid as the peas will loose its green colour In a pressure cooker, add 1 TBS of oil and cloves to it.
  • Add the rice and some salt to taste. stir in for few minutes and then mix curd and stir for another few minutes. Now add the water and let cooker blow 2 whistles. The peas will have been cooked by now. Drain it and run over cold water so that the green colour remains intact.
  • Now in pan, take oil and add curry leaves & chillies. Once they start crackling, add the cooked peas and stir it for few minutes on a low flame. Add pinch of salt and mix well & remove it from heat.
  • Once the pressure is gone from the cooker, remove the rice on a plate and spread across so that no lumps are formed. Add the peas and mix well so that the peas are seen evenly. Add salt if required and garnish with coriander.
  • Additional Information

    Goes well with curd or any veg/non-veg curry.
