I love pasta, and this is my favourite sauce that I created one night, it's so easy and quick and sooo tasty.

I love pasta, and this is my favourite sauce that I created one night, it's so easy and quick and sooo tasty.

Ingredients

Serves: 2

Metric Cups
  • 4 large vine tomatoes
  • 2 large garlic
  • 1 handful basil leaves (torn)
  • 2 teaspoons olive oil
  • 1 tablespoon olive oil (for frying)
  • cherry tomatoes (halved)
  • 1 handful pancetta (chopped)
  • spaghetti
  • balsamic vinegar (optional)
  • Parmesan cheese (optional)

Method

Mediterranean Style Fresh Tomato and Garlic Spaghetti is a community recipe submitted by Inga.D and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Fry up the pancetta and put to the side and put your pasta on to boil.
  • Blanche your tomatoes and peel, liquidise with the garlic and the olive oil. Remove from blender, add salt and pepper to taste.
  • Add handful of fresh basil leaves (torn), some halved cherry tomatoes and the fried pancetta. Add this to some spaghetti with a splash of balsamic, grated parmesan (I have mine with some fresh rocket leaves)
  • have some nice crusty bread to hand... it's really tasty! (also goes well with a glass of your favourite white wine : ) Enjoy.x
