Ingredients

Metric Cups
  • 125 grams self-raising flour
  • 60 grams unsalted butter (and extra for greasing)
  • 60 grams caster sugar
  • ½ egg yolk (beaten)
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon apple juice
  • 1 teaspoon apple zest
  • 4⅖ ounces self-rising flour
  • 2⅛ ounces unsalted butter (and extra for greasing)
  • 2⅛ ounces superfine sugar
  • ½ egg yolk (beaten)
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon apple juice
  • 1 teaspoon apple zest

Method

  • Sieve flour into a bowl and rub the butter into the flour until you have a breadcrumb texture.
  • Use a knife and stir the sugar, egg yolk, orange zest, juices and apple zest into the bowl mix till it all comes together as a dough.
  • Flour a surface and roll dough into a log, wrap in cling film and chill in the fridge for 1 an a half hours
  • preheat the oven to gas mark 4
  • Lightly grease a baking sheet with butter. slice the log into thin discs and place the tray and cook for 7-10 minutes. leave to cool and enjoy!!!
