  • Heat knob of butter with a little olive oil in a large frying pan. Add sliced and washed leeks to pan and coat in butter - let them fry briefly but ensure they don't go brown.
  • Dissolve chicken stock cube in 150ml boiling water and add to pan covering the leeks - you'll know at this stage whether to add more water. Let them simmer until they are completely soft, approx 20mins.
  • Chop ham into small squares but not matchsticks.
  • Bring pan of water to boil and salt. Add pasta and cool until al dente.
  • Add ham to frying pan with leeks as well as cream, season and stir. Let this simmer for a few minutes. Drain pasta and serve in bowls with sauce on top. Generously sprinkle with parmesan.

  • Additional Information

Remember to keep an eye on leeks and never let them get too dry - add water as and when needed. I wouldn't recommend mixing the sauce and pasta together. Definitely serve in bowls as sauce is quite runny. Enjoy x

    • This is a stunning recipe, perfect in every way. Maximum flavour, minimal effort. Made this twice already with leftover Xmas ham. As my husband says "It's a keeper". Thank you so much for posting this recipe.
