Ingredients

Metric Cups
  • 4 peaches (ripe)
  • 250 millilitres white wine
  • 2 tablespoons caster sugar (or to taste)
  • 1 lemon (pared zest of)
  • 1 vanilla pod (four long strips, cut into four long pieces)
  • 4 peaches (ripe)
  • 9 fluid ounces white wine
  • 2 tablespoons superfine sugar (or to taste)

  • 1 vanilla bean (four long strips, cut into four long pieces)

Method

  • I don't always peel the peaches, but just slice in half and then slice each half into four so each person has eight segments. But if you want them peeled, then first put them in a bowl, cover with boiling water and leave for a minute or so. This will make the skins come off more easily, and then slice each peach into eight.
  • Stir the sugar into the wine, adding the pared lemon zest and vanilla pod snipped into 4.
  • Put the sliced peaches into the sweetened wine. Cover bowl with clingfilm and refrigerate for 2 - 6 hours.
  • Remove peaches to a pretty glass bowl or to individual glass bowls and serve, still chilled. Eat the peaches with a spoon, and then drink the lovely scented wine.
