Introduction

This dish is a regular in our home because the kids love it and its very budget-friendly.

Ingredients

Serves: 4-6

  • 6 medium pork chops
  • ½ cup chopped garlic
  • 1 cup button mushrooms (whole or sliced)
  • 1 large red bell pepper (cut into cubes)
  • 2 cans cream of mushroom soup

Method

  • Heat a tsp of oil or butter in a skillet and saute the garlic and mushrooms.
  • Once the garlic and mushrooms are golden brown, lay the pork chops on the pan and brown each side. If you trimmed the fat off the pork, add a tablespoon of oil to avoid burning the garlic. However, if you kept the fat on the pork, there is no need for more oil.
  • If you want your pork well done, add 2 cups of water after you've browned the meat; cover the pan, and cook for 20 minutes or more over medium heat.
  • Pour the cream of mushroom and simmer for 10 mins. (1 can is actually enough; but you can put 2 if you want lots of sauce like our household)
  • Add the bell peppers and simmer for 2-3 minutes more.
  • Serve with mashed potatoes or rice.
  • Additional Information

Once I tried cooking the chops in white wine instead of water, and it made the dish more interesting.
