Introduction

Because I love prawns and the smooth, sweet taste of coconut this is one of my favourites. It's also really quick to make.

Ingredients

Serves: 4

Metric Cups
  • 250 grams prawns (shelled and deveined)
  • 2 medium onions
  • 3 green chillies
  • 2½ centimetres fresh ginger
  • 5 cloves garlic
  • ¼ teaspoon turmeric
  • 1 handful fresh coriander (chopped)
  • 1 can coconut milk
  • lemon juice
  • 8⅚ ounces shrimp (shelled and deveined)
  • 2 medium onions
  • 3 green chiles
  • ⅞ inch fresh gingerroot
  • 5 cloves garlic
  • ¼ teaspoon turmeric
  • 1 handful cilantro (chopped)
  • 1 can coconut milk
  • lemon juice

Method

  • Chop the onions fine Chop the chillies and the ginger and garlic fine. ( I use an electric chopper)
  • Heat some vegetable oil and sauté the onions till soft Add the chillies, ginger and garlic and sauté for 2 minutes more
  • Add the turmeric and mix well Put in the fresh coriander Add half the coconut milk and a very little water and bring to a boil. Simmer for 10 minutes
  • Add the prawns and the rest of the coconut milk and simmer fro another 10 minutes
  • Turn off the heat and squeeze in some lime juice to taste.

  • Additional Information

    For those who can stand the heat, you can add up to 6 green chillies. I usually sieve this with steamed rice, but you can also serve it with a crusty bread or boiled noodles.
