PRAWN MOLEE

Because I love prawns and the smooth, sweet taste of coconut this is one of my favourites. It's also really quick to make.

Ingredients

  • 250 gms praws (shelled and deveined)
  • 2 medium onions
  • 2 -3 green chillies
  • 1" ginger
  • 5 pods garlic
  • 1/4 tsp turmeric
  • A handful of chopped cilantro
  • 1 can coconut milk
  • lemon juice

Method

  1. Chop the onions fine Chop the chillies and the ginger and garlic fine. ( I use an electric chopper)
  2. Heat some vegetable oil and sauté the onions till soft Add the chillies, ginger and garlic and sauté for 2 minutes more
  3. Add the turmeric and mix well Put in the cilantro Add half the coconut milk and a very little water and bring to a boil. Simmer for 10 minutes
  4. Add the prawns and the rest of the coconut milk and simmer fro another 10 minutes
  5. Turn off the heat and squeeze in some lime juice to taste.
