Ingredients
Switch to Cup Measures- 1 kilogram rhubarb
- 300 grams sugar
- 1 vanilla pod (split)
- limoncello
Method
- Mix sugar with rhubarb, put in an ovenproof dish and stick the vanilla pod into the mixture.
- Bake for one hour.
- Sieve rhubarb (use pulp for a dessert) - keep the juice.
- For one drink: Mix 50 ml juice with water to taste and 30 ml Limoncello.
- Serve in long-drink glass with ice cubes.
