What does this mean?

I had some leftover rhubarb juice from the Rhubarb Fool in Forever Summer.... and invented this fresh and summery drink. Beautiful colour!

Ingredients

Switch to Cup Measures
  • 1 kilogram rhubarb
  • 300 grams sugar
  • 1 vanilla pod (split)
  • limoncello

Method

  1. Mix sugar with rhubarb, put in an ovenproof dish and stick the vanilla pod into the mixture.
  2. Bake for one hour.
  3. Sieve rhubarb (use pulp for a dessert) - keep the juice.
  4. For one drink: Mix 50 ml juice with water to taste and 30 ml Limoncello.
  5. Serve in long-drink glass with ice cubes.
