  • 1 artichoke
  • 1 courgette
  • 1 red pepper
  • 1 small red onion
  • garlic
  • 2 tomatoes
  • olive oil
  • salt
  • pepper

Method

  • Prepare the vegetables. Chop up into quite big pieces
  • Prepare the globe artichoke by trimming the stem and cutting off the spikes. If the g.a is very big, you can cut it down the center.
  • Put all these veggies into a roasting dish. Add some oil, a little salt and loads of pepper and toss it all around so everything is covered. If the roasting dish has a lid, use this for the first 15 mins or so, then remove it. If there is no lid, use some foil to cover the dish.
  • Put this into a hot oven in the middle shelf. It should be ready in around 45- 60 mins.
  • Serve with rice, couscous or quinoa. It tastes delicious with a bit of lime or lemon juice squeezed over. And of course you can use any vegetables that you like.
