Introduction

This has to be one of my favourite comfort foods in winter.

Ingredients

Serves: 4-6

  • 5 large potatoes
  • 2½ cups chopped cabbages
  • 2 chopped leeks (washed)
  • 2½ cups coarsely chopped broccoli
  • 4 tablespoons butter
  • ¼ teaspoon nutmeg
  • salt
  • pepper
  • ¾ cup milk
  • grated Parmesan cheese

Method

  • Peel potatoes, cut into chunks and boil in water 15 minutes, meanwhile steam cabbage, leeks and broccoli.
  • Drain the potatoes and mash with 2 tbsp butter, the milk, nutmeg and the salt & pepper.
  • Stir in the veggies and mix.
  • Spread in an oiled 13 x 9 inch baking pan. Dot the remaining butter over the potato.
  • Sprinkle over a good amount of parmesan so you have a nice layer.
  • Place under the grill for 3-4 minutes or until golden brown and bubbly.
