RUMPLEDETHUMPS

This has to be one of my favourite comfort foods in winter.

Ingredients

  • Vegetarian
  • 5 large potatoes
  • 2 1/2 cups chopped cabbage
  • 2 leeks, washed and chopped
  • 2 1/2 cups coarsely chopped broccoli
  • 4 tbsp butter
  • 1/4 tsp nutmeg
  • salt and pepper
  • 3/4 cup milk
  • grated parmesan

Method

  1. Peel potatoes, cut into chunks and boil in water 15 minutes, meanwhile steam cabbage, leeks and broccoli.
  2. Drain the potatoes and mash with 2 tbsp butter, the milk, nutmeg and the salt & pepper.
  3. Stir in the veggies and mix.
  4. Spread in an oiled 13 x 9 inch baking pan. Dot the remaining butter over the potato.
  5. Sprinkle over a good amount of parmesan so you have a nice layer.
  6. Place under the grill for 3-4 minutes or until golden brown and bubbly.
