Sierra Stewed Chicken

Introduction

In the winter because we ski so much and I volunteer with search and rescue, my slow cooker (Crock Pot) gets a work out. One of my families favorite meals is stewed chicken with white wine, tomato and mushrooms.

Ingredients

Serves: 4-6

  • 1 whole chicken (or 6 chicken thighs or breasts)
  • 1 cup white wine (good quality)
  • 1 cup chicken broth (homemade or excellent quality store-bought chicken stock)
  • 1 large sliced onion
  • 1 cup stewed tomatoes
  • 1 cup sliced button mushrooms
  • salt (to taste)
  • pepper (to taste)

  • Simple place everything into the slow cooker (Crock Pot) and place on medium and let cook all day.
  • The meat falls off the bones easily and it makes a great soup for dinner with fresh rolls or a loaf of french bread, and real butter.
  • You could also cook in a dutch oven at 350* until cooked and tender. Around two hours.
