Simple Chicken Breasts With Asparagus

Introduction

Very simple dish, great for somebody who wants to start with asparagus or is starting cooking! :) Very quick as well!

Ingredients

Serves: 2

  • 2 chicken breasts
  • 20 baby asparagus
  • 6 small potatoes
  • butter (melted, or olive oil)
  • cream
  • butter
  • salt
  • pepper
  • lemon juice

Method

  • Cut the breasts so you have 4 thin slices.
  • Wash the baby asparagus and put 5 pieces on each slice. Fold the breasts and fix them with toothpicks.
  • Sprinkle the scrolls with salt, pepper and lemon juice and leave for 10 - 15 minutes.
  • Peel potatoes, slice them and boil them for 20 minutes. When ready, you can pour out the water, add butter and leave in a pot for few more minutes.
  • Heat a pan and add melted butter or olive oil (both are good). Put in the scrolls and wait until they get nicely slightly brown.
  • Then add cream (as much as you like) and you can add some water as well. Lower the heat and cover.
  • Leave for few minutes and then serve with potatoes.
  • Additional Information

    You can always add whatever you like. This is a very simple recipe so use your imagination to make it even better :)
