I am not sure if this would be on my list of last suppers but I think it comes pretty close. Either this or toast and butter and honey or Chinese deep fried squid or date and nut and parsley stuffed sardines or Kerala fish curry. Anyway it tastes sublime.

Serves: 1-2

Metric Cups
  • smoked haddock
  • butter
  • lemons
  • fresh parsley
  • puy lentils
  • carrots
  • onions
  • garlic
  • mushrooms
  • bread (toasted)

Method

  • First fry onion & garlic in oil, add carrot and puy lentil, rosemary and bay leaf. Cover with water and cook. Add mushroom towards the end.
  • Then grill the smoked haddock until golden.
  • Spread parsley butter over the top and squeeze of lemon.
  • Serve with the toast.
