Smokey Bacon and Tomato Pasta for One Hungry Person

I rustled this up from left overs in the fridge, expecting very little. Then I nearly passed out at how satisfyingly good it was. Easily multiplied up for more people, but I wouldn't make it in bulk as I think it's important for the tomatoes to fry rather than steam or boil in the pan.

Ingredients

Serves: 1

Metric Cups
  • 75 grams wholewheat spaghetti
  • olive oil
  • 2 rashers smokey bacon (roughly chopped)
  • 3 spring onions (chopped)
  • 1 red pepper (chopped fairly small)
  • 1 clove garlic (crushed and chopped)
  • 1 packet cherry tomatoes (on the vine for preference, halved or quartered depending on size)
  • 1 tablespoon cream
  • 1 handful basil leaves (torn, a small handful)
  • 2⅔ ounces wholewheat spaghetti
  • olive oil
  • 2 rashers smokey bacon (roughly chopped)
  • 3 scallions (chopped)
  • 1 red bell pepper (chopped fairly small)
  • 1 clove garlic (crushed and chopped)
  • 1 packet cherry tomatoes (on the vine for preference, halved or quartered depending on size)
  • 1 tablespoon cream
  • 1 handful basil leaves (torn, a small handful)

Method

  • Put the pasta on in a pan of boiling salted water. I used wholewheat and the pasta was ready at exactly the same time as the tomato sauce.
  • Put a small dribble of olive oil into a frying pan so the bacon doesn't stick and then fry the bacon pieces until golden brown. Remove the bacon from the pan and set aside.
  • Don't wash the pan, but add in some more olive oil, and then the chopped spring onions. After about a minute add in the red peppers and garlic. After about 2-3 minutes add in the tomatoes and wait for them to reduce down and go sticky (about 5-6 minutes).
  • Return the bacon to the pan and give it a good stir. Then add the tablespoon of cream and the spaghetti.
  • Put into a bowl and scatter the basil leaves on top, stirring them in as you eat. I found the saltiness of the bacon meant this didn't need any extra seasoning.
  • You could consider some freshly ground black pepper or fresh parmesan on top. Apply to face while watching Nigella videos on youtube. Perfect :)!
