Ingredients

Serves: 4-6

Metric Cups
  • 1 green chilli (seeded)
  • 1 clove garlic (crushed)
  • 2 spring onions (chopped)
  • 1 teaspoon fresh ginger (grated)
  • ½ teaspoon ground coriander
  • 40 grams macadamia nuts (chopped)
  • 1 stick lemongrass (finely chopped)
  • 1 teaspoon oil
  • 250 grams white fish (fillets)
  • 1 teaspoon soy sauce
  • salt
  • black pepper

  • 1 teaspoon fresh gingerroot (grated)
  • ½ teaspoon ground coriander
  • 1⅖ ounces macadamia nuts (chopped)
  • 1 stick lemongrass (finely chopped)
  • 1 teaspoon oil
  • 8⅚ ounces white fish (fillets)
  • 1 teaspoon soy sauce
  • salt
  • black pepper

Method

  • combine the chilli, garlic, spring onion, ginger, coriander, macadamia nuts and lemon grass in a food processor. process until mixture becomes a smooth paste.
  • heat the oil in a pan and cook paste over medium heat for 4 minutes or until golden brown. allow to cool.
  • process the fish in a food processor until very finely minced. add the cooked paste, soy sauce, salt and pepper and process to blend together. refrigerate until chilled through (about 1 hour).
  • mould heaped tsp. of the mixture around wooden skewers.
  • cook under a preheated hot grill for 3 minutes on each side or until golden brown.
  • serve hot with satay sauce.
