Spicy Roast Chicken

Introduction

Simple dish best eaten with rice or bread. It practically cook without hassle.

Ingredients

Serves: 4-6

  • 1 chicken (whole)
  • 4 cloves garlic
  • 2 large red onions
  • 3 centimetres fresh ginger
  • 2 tablespoons black pepper sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon chicken stock (granules)
  • 1 sprig fresh rosemary

Method

  • Clean and pat dry chicken with kitchen paper towel
  • Blend garlic, onions, ginger, black pepper sauce and oyster sauce together in an electric blender
  • Coat chicken with turmeric powder, salt and chicken stock granules.
  • Add the spices and marinade over night in a freezer.
  • Before roasting put the chicken and all the ingredients with rosemary in an aluminium foil. Put in a baking tray and cook for about 45 mins. to 1 hour depending on the size of the chicken.
