Spumante Chicken

Introduction

This a simple chicken dish my family has enjoyed for many years...it has a taste all of its own and i am sure you will love it ...

Ingredients

Serves: 6 - 8

  • 8 chicken breasts (fillets)
  • 1 bottle sparkling wine (any kind)
  • 1 large red pepper (diced)
  • 1 large green pepper (diced)
  • 5 shallots (chopped - or 2 medium onions, diced)
  • 2 packets chicken noodle soup (large packets that serve 4-6 people)

Method

  • Grab a large baking dish , pour the whole bottle of spumante in, add the 2 pkts of soup mix.
  • Stir and combine well, then add the chopped capsicums and shallots or onions
  • Mix around, place the chicken fillets into the liquid, spaced out, cover with foil and cook in a 180 degree oven for about 45 mins.
  • When you check it, the liquid should be thicker, turn the chicken over and put back in the oven for about 15 to 20 mins.
  • If the sauce is not thick enough , add a wee bit of corn flour and mix in , or just pour into a pan and reduce a bit over the heat.
  • Serve with some steamed veges...my choice would be green beans, julienne carrots and maybe some corn ...all adds to the colour of the dish .......yummo
