This was one of the first starters I made, at that point in life of sharing a girlie house and having dinner parties. Sure you must've seen loads of recipes already, but I love the tastes in this!

Ingredients
Switch to Cup Measures- 4 large flat mushrooms (cleaned)
- 1 ball mozzarella (chopped)
- Stilton cheese (half as much as the Mozzarella, chopped)
- 12 large king prawns (cooked)
- 1 packet watercress
- 4 teaspoons olive oil
Method
- Put cleaned mushrooms on a grill pan stalk side up drizzle with olive oil. grill for a few minutes.
- Alternatively pop them in the Microwave for a minute or two. Place three prawns on each mushroom then top with the Mozzarella and stilton.
- Place under a hot grill under prawns completely hot, cheeses hot and bubbling.
- Serve on bed of Watercress. Delicious!
