Introduction

These are great in summer warm and spread with butter with a light and warm soup or a chilled soup. Makes 12

Ingredients

Serves: 3

  • 3 cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons salt
  • 1 cup grated cheese
  • 1 cup grated zucchini
  • 3 tablespoons chopped fresh parsley
  • 2 eggs
  • 3 tablespoons chopped scallions
  • 1 tablespoon chopped fresh dill
  • 1 cup buttermilk
  • ¼ cup melted butter

  • Preheat oven 180 degrees Celsius.
  • Sift the dry ingredients into a large bowl. Add the cheese, zucchini, parsley, scallions and dill then mix lightly.
  • In another bowl beat the eggs together with the buttermilk and melted butter.
  • Add the wet mix to the flour-zucchini mix and stir just to blend. Spoon into a buttered muffin tin and bake for 30-35 minutes.
