Swiss Eggs

Introduction

My favourite solitry pick me up lunch. A little cream can be poured over the egg for special occassions. A little butter can be dotted ove the top of the cheese. I find this too fatty. The spinach can be omited. Serves 1

Ingredients

Serves: 2

  • 1 handful washed, dried and destalked spinach
  • oil (a little, for frying)
  • freshly grated nutmeg
  • 4 ounces Gruyere cheese (or flavoursome melting cheese)
  • 1 egg
  • white pepper (a little)

Method

  • Butter a small gratin dish.
  • Heat a frying pan and add a little oil.
  • Wilt spinach adding a little freshly grated nutmeg, and transfer to the gratin dish.
  • Sprinkle over half the cheese.
  • Make a well.
  • Crack an egg into the well.
  • Season with a little white pepper.
  • Cover with remaining cheese.
  • Melt the cheese under the grill for 12 - 18 minutes depending on how you like your egg, runny or well done. Serve immediately on its own with fried bacon, mushrooms and tomatoes or a salad.
