What does this mean?

This makes a large quantity and so is good for a party and goes down particularly well at barbeques. It is vegan.

Ingredients

Switch to Cup Measures
  • 1 packet bulgar wheat
  • 5 tomatoes (chopped and deseeded)
  • ¾ cucumber (peeled and chopped)
  • 1 bunch fresh mint (chopped)
  • 1 bunch fresh parsley (chopped)
  • 1 medium onion (or 3 medium shallots, chopped)
  • 1 lemon (juice of)
  • 7 tablespoons olive oil
  • salt (plenty)
  • pepper (plenty)

Method

  1. Prepare and chop ingredients.
  2. Put bulgar wheat in a bowl and cover with hot water. Leave to soak for half an hour. After soaking, drain wheat using a sieve and squeeze out excess water with your hands.
  3. Put all of the ingredients in a bowl and mix well.
