  • 500 grams tagliatelle (green - not white)
  • 30 grams butter
  • ½ small onion (finely chopped)
  • 150 grams smoked salmon
  • 200 grams cream
  • 10 grams lemon juice
  • gram fresh dill (or fennel top)
  • 17⅔ ounces tagliatelle (green - not white)
  • 1 ounces butter

  • 5⅓ ounces smoked salmon
  • 7 ounces cream
  • ⅓ ounce lemon juice
  • gram fresh dill (or fennel top)

Method

  • Melt the butter and cook the onion but do not allow it to brown.
  • Add ½ the salmon roughly chopped and the cream. Warm gently and add lemon; lightly mash.
  • Cut the rest of the salmon into thin strips using kitchen scissors.
  • Cook and drain pasta and place in a bowl.
  • Add cream and salmon sauce. Stir thoroughly.
  • Add salmon strips and dill or fennel and serve
