Tea Smoked Duck

Introduction

A different way of cooking duck to give it warm smokey flavour.

Ingredients

Serves: 0

  • duck breasts
  • 2 ounces rice (any variety)
  • 2 ounces brown sugar
  • 1 ounce tea leaves (emptied tea bags will suffice)
  • 1 tablespoon runny honey

Method

  • Line the base of a deep pan with aluminium foil, shiny side up. Be sure to cover the whole pan or it will ruin.
  • Mix all dry ingredients together, sprinkle onto aluminium foil.
  • Place another sheet of aluminium foil over the tea mixture, shiny side down.
  • Place duck breasts on foil. Drizzle with honey.
  • Cover with a lid and cook for 8 minutes for pink duck meat.
  • Rest as normal.
