This simple cake is perfect to do in large batches and tastes great. You can make the cake as 'chocolatey' as you like and is just as good as a plain sponge cake.

Ingredients
- 8 oz self-raising flour
- 8 oz sugar
- 8 oz margarine
- 5 eggs
- 5 drops vanilla essence
- 4 teaspoons baking powder
- 5 oz unsweetened cocoa (according to taste)
Method
- Pre-heat the oven at gas mark 3, 170ºC,325ºF and grease 2 cake tins.
- Sieve the flour and baking powder. Add the sugar, margarine and eggs. Mix with an electric whisker. Add vanilla essence and unsweetened cocoa. Mix again.
- Scoop the mixture evenly into the greased tins and place them in the oven for 15 to 20 mins.
- For a plain sponge use 4 eggs and miss out the unsweetened cocoa.
