What does this mean?

hearty winter soup or summer light soup you can have it both ways

Ingredients

  • 2 red onions
  • 4 rashers smokey bacon
  • 2 cloves smoked garlic
  • 2 tins diced tomatoes
  • 6 oz red lentils (split - the kind you need don't need to pre-soak)
  • 1 dash Worcestershire sauce
  • 1 dash hot pepper sauce
  • 1 dash tomato puree
  • 1.7 pints chicken stock (or vegetable)

Method

  1. Chop red onions and garlic finely
  2. Cut bacon into strips. Add to good sized stock pot with a teaspoon of oil and sweat off onions and garlic then put in bacon
  3. Add tomatoes, lentils, stock and give a good stir
  4. Add all other ingredients and salt and pepper to taste
  5. Bring to boil stirring so that the lentils don't stick to the bottom. After about 10 minutes bubbling turn down heat to low and simmer for around 1 hour or until lentils are tender
  6. Once ready you can serve with homemade bread as a chunky hearty winter soup or blitz to make a really fine soup.

My daughter loves this soup and calls it 'her tomato soup' Enjoy
