Traditional Ukrainian Borshs

Introduction

This is a traditional Ukrainian dish but I have improved the recipe.Now it is healthier and more modern.

Ingredients

Serves: 2

  • 3 medium beets
  • 1 carrot
  • 1 onion
  • 1 cup kidney beans
  • mushrooms (dried boletus is the best)
  • 3 cloves garlic
  • 3 potatoes
  • 1 yam
  • fresh parsley
  • marjoram
  • sweet paprika
  • 2 bay leaves
  • freshly ground pepper
  • fresh dill
  • chilli pepper
  • thyme
  • olive oil
  • 2 chicken legs (or some wings - for non-vegetarians)
  • salt
  • red wine vinegar
  • sugar
  • 9 ounces sour cream (30% fat)

Method

  • beets should be steamed before.
  • Place chicken in a large pot with chopped onions, grated carrots, bay leaves, kidney beans and some cloves of garlic. Add water and bring to a boil. Reduce heat to a gentle boil and cook for about 20 min, then add peeled and cut into chunks potatoes and yam, then add sliced mushrooms and boil for next 20min until beans are tender.
  • Season the borsches with salt and other herbs and spices to taste. Boil for 15-20min.
  • Grate steamed beets( because of steaming they should be very red) and add them to the borsches.
  • Add 1-2 tablespoons of olive oil, 1-2 tablespoons of vinegar and 1 teaspoon of sugar to taste.
  • Turn off the heat. Extract the chicken and bone it. Then add chopped meat back to the pot. Chop some garlic. Add some sour cream and garlic to the borsches.
  • Serve with more cream and fresh parsley on it. Bon appetite!
