A Tasty And Delicous Soup. It's Healthy And Great For Making The Day Before And Taking To Work The Next Day. My Mother Loves This Recipe Because It Is A Delicous Mix Between Smooth And Chunky

Ingredients

Serves: 2-4

Metric Cups
  • 100 grams broccoli
  • 1 medium red pepper
  • 2 sticks celery (medium-sized)
  • 1 clove garlic
  • 2 carrots
  • 1 large potato
  • 1 vegetable stock cube
  • ½ teaspoon herbs (mixed)
  • ½ teaspoon thyme
  • ½ teaspoon fresh tarragon
  • ½ teaspoon fresh chives
  • 3½ ounces broccoli
  • 1 medium red bell pepper
  • 2 sticks celery (medium-sized)
  • 1 clove garlic
  • 2 carrots
  • 1 large potato
  • 1 vegetable broth cube
  • ½ teaspoon herbs (mixed)
  • ½ teaspoon thyme
  • ½ teaspoon fresh tarragon
  • ½ teaspoon fresh chives

Method

Vegetable Soup is a community recipe submitted by jake-mcleod and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Clean and trim all the vegetables. Slice the Pepper, celery sticks, garlic clove and carrots.
  • Then dice the potato. Then put all the vegetables into a pot. Boil 1 pint of boiling water and stir with stock until completely dissolved.
  • Next, add the stock to the pot with the tarragon, thyme, fresh chives and the mixed herbs.
  • Next, bring the pot to the boil then simmer for 30-45 mins
  • Finally split the soup in half and blend one of the halves, then add the non-blended half to the blended half and serve.

    • Very tasty, quick and easy to make. I added a splash of Worcestershire sauce for extra flavour but otherwise followed the recipe fully. Can imagine it being generally easy to adapt. Thank you!

    • Another thing- next time I would do a double batch. The recipe says it serves 2-4 people. As a main meal 2 hungry adults used the whole lot, and I do like to have leftovers with soup for tomorrow's lunch!
