Ingredients

Serves: 4

Metric Cups
  • 400 grams sugar
  • 100 millilitres alcohol (for drinks)
  • 100 millilitres marsala (dry)
  • ½ litre milk
  • 6 egg yolks
  • 14 ounces sugar
  • 3½ fluid ounces alcohol (for drinks)
  • 3½ fluid ounces marsala (dry)
  • ⅞ pint milk
  • 6 egg yolks

Method

  • Beat the sugar and eggs yolks until very pale and creamy.(If you have misgivings about raw eggs yolks you can pasteurize them in a bowl over a pan of simmering water...)
  • Add the marsala, alcohol and milk, always stirring Sieve the mixture and pour it in a bottle.
  • Close the lid and keep in the fridge
  • Shake well before drinking it
