Ingredients

for the brownies

  • 4 oz unsalted butter
  • ⅔ cup brown sugar
  • ¾ cup water
  • ¼ cup chopped golden raisins
  • 1 cup self-raising flour
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsweetened cocoa
  • ½ cup chopped walnut
  • ¼ cup chocolate (bits)
  • 1 oz walnut halves

for the icing

  • 2 oz unsalted butter
  • 7 fl oz confectioners' sugar
  • 1 tablespoon unsweetened cocoa
  • 1 tablespoon milk

Method

  1. Preheat oven to 180C, prepare 27x18CM tin.
  2. Combine butter, sugar, water and golden raisins in a small pan. Stir low heat for 5mins until butter is dissolved, remove from heat.
  3. Sift dry ingredients in a large bowl, add nuts and choc bits. Add butter mix to dry ingredients, stir until just combined; do not overbeat.
  4. Spoon mixture into prepared tin, bake for 30 mins or until a skewer comes out clean.
  5. Leave to cool and then ice.
  6. To make Icing:
  7. Beat butter, add sugar, cocoa and milk, beat until smooth.
  8. Spread onto brownie, cut into diamonds and decorate each with half walnut.
