Walnut-Pineapple-Raisin Tea Bread

Introduction

The combination is wonderful. It's both quick and easy.

Ingredients

Serves: 4-6

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup softened unsalted butter
  • ¾ cup sugar
  • 1 egg
  • ¼ cup orange juice
  • ¾ cup crushed pineapples (reserve the juice)
  • ½ cup raisins
  • ½ cup chopped walnuts

Method

  • Stir together the flour, baking powder, bicarb and salt. Set aside. Beat the butter and sugar til creamy.
  • Add in thee gg and orange juice. Beat well. Add a third of the flour mixture and stir in well.
  • Add the rest of the flour mixture, pineapple with about 3 tbsp of the juice and raisins.
  • Stir til combined. Pour into greased baking pan or loaf tin. Scatter the top with the walnuts.
  • Bake in 160 degrees Celsius oven for 30 mins.
  • Leave to cool in the pan for 10 mins before removing and cooling completely on a wire rack.
  • Additional Information

    I have tried substituting the raisins with dried cranberries, which worked well too.
