I made this pasta dish one night just to use up what was in the fridge. It turned out to be quite nice, so now I often make it. It's very handy as it only takes about 10 minutes.

Ingredients
Switch to Cup Measures- 250 grams pasta
- 250 grams mushrooms
- 1 red pepper
- 1 green pepper
- 2 sundried tomatoes
- 75 grams cream cheese
- 2 teaspoons pesto
Method
- Cook the pasta as directed on the pack.
- Meanwhile stir-fry the mushrooms and peppers. W
- hen the pasta is cooked, drain and add the veg, including the sun-dried tomatoes.
- Add the pesto & cheese and stir well. Voila!
