Wina's Apple Meringue

Ingredients

Serves: 9

Metric Cups

For the Base

  • 240 grams unsalted butter
  • 200 grams granulated sugar
  • 400 grams plain flour
  • 4 egg yolks (not necessary to use all four)
  • 1 teaspoon vanilla essence

For the Middle

  • 3 large bramley apples
  • 2 medium pears
  • ½ teaspoon ground cinnamon
  • 1 pinch of nutmeg (grated)

For the Top

  • 4 egg whites
  • 200 grams caster sugar
  • 1 teaspoon white wine vinegar
  • 1 teaspoon cornflour
  • chocolate sprinkles (or cocoa powder, optional)

  • 7 ounces granulated sugar
  • 14 ounces all-purpose flour
  • 4 egg yolks (not necessary to use all four)
  • 1 teaspoon vanilla essence

For the Middle

  • 3 large bramley apples

  • ½ teaspoon ground cinnamon
  • 1 pinch of nutmeg (grated)

For the Top

  • 4 egg whites
  • 7 ounces superfine sugar
  • 1 teaspoon white wine vinegar
  • 1 teaspoon cornstarch
  • chocolate sprinkles (or cocoa powder, optional)

Method

Wina's Apple Meringue is a community recipe submitted by kuahlada and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  1. Pre-heat oven to 200 C
  2. Melt butter and sugar in non-stck saucepan. Remove from heat.
  3. Gradually add in sifted flour. Mix well into a doughy consistency.
  4. Stir in egg yolks and vanilla essence.
  5. Turn pastry out into ungreased 9 x 12 inch shallow non-stick baking tray. Use fingers to knead pastry into shape of tin, as pastry may be crumbly. Rest in fridge.
  6. Peel and grate apples & pears. Add cinnamon and nutmeg.
  7. Remove tray from fridge; spread fruit pulp over cooled pastry. Bake in oven for 5-6 minutes it takes to make the meringue.
  8. Whisk egg whites until stiff; add half amount of caster sugar. Beat briskly. Add in vinegar, cornflour and rest of sugar.
  9. Bring semi-baked pastry out of oven; spread meringue over all fruity bits.
  10. Embellish with chocolate sprinkles or cocoa powder, sifted lightly over snowy peaks!
  11. Turn heat down to 150 C; bake for 30 minutes, then leave in residual heat for another 15-20 minutes.
