Ingredients

Switch to Cup Measures
  • 100 grams walnuts (chopped)
  • 1 lemon
  • 250 grams margarine
  • 150 grams icing sugar
  • 5 egg yolks
  • 450 grams plain flour
  • 1 egg white
  • 100 grams apricot jam

Method

  1. Line a baking pan with baking parchment.
  2. Cream the margarine and icing sugar, then add the zest and juice of a lemon. Add the egg yolks one by one, beating well, and then combine with the flour and a pinch of salt.
  3. Form walnut-sized walls (if it's too sticky, add some flour). Dip the balls in lightly beaten egg white and roll in the walnut. Put in the tray and push it with your thumb to make a well in each ball.
  4. Bake in pre-heated 180C oven (it should be light), and add some jam in the well till it's warm. (Actually it should look like lemon gems, with a walnut cover)
