Introduction

This is a wonderful meal and so easy. Make the sauce beforehand and heat when needed. I make the sauce the night before and after work I just boil the pasta and heat the sauce and its done! Great with grated halloumi and mint over the top.

Ingredients

Serves: 4 plus

Metric Cups
  • chicken legs (or thighs, enough for amount of people - you could also use a few chicken breasts cut into bite-sized pieces)
  • farfalle pasta (or penne)
  • 1 can chopped tomatoes (large can)
  • 1 onion (finely sliced)
  • 1 stock cube (vegetable or chicken)
  • halloumi
  • dried mint (to sprinkle over at end)

  • 1 can diced tomatoes (large can)
  • 1 onion (finely sliced)
  • 1 broth cube (vegetable or chicken)
  • halloumi
  • dried mint (to sprinkle over at end)

Method

  • Fry the onions until softened but not brown then add the chicken pieces and fry until browned a bit.
  • Add the tinned tomatoes and a bit of boiling water to just cover the chicken, add the stock cube and stir.
  • Simmer on low for about 20 mins or so, taste and season if required.
  • It should be quite thick but not too thick.
  • Meanwhile cook the pasta to packet instructions.
  • Drain, serve with sauce over the top and sprinkling of halloumi cheese and mint.
